In order to run a successful restaurant I must keep labor costs low and in order to keep labor costs low I must send employees home when business slows down.. But, in order to run a successful restaurant I must also ensure customers receive fast and efficient service and in order to ensure customers receive fast and efficient service I must keep employees on the clock to help out during a potential rush.. I can't both send employees home when business slows down. and keep employees on the clock to help out during a potential rush..
